บางเรื่องราวไม่ได้ถูกบันทึกไว้ในตำรา
แต่อยู่ในวัตถุดิบ ในฤดูกาลและในวิถีการกินของผู้คน
เมื่อฤดูฝนมาถึง สายน้ำ ผืนป่า และผืนดินของอุบล
นำมาซึ่งปลาแม่น้ำ ของจากป่า และพืชผักตามฤดูกาล
พร้อมกับภูมิปัญญาการหมักดองและถนอมอาหาร
ที่ถูกส่งต่อกันมาจากรุ่นสู่รุ่น เก็บรสของฤดูฝนไว้สำหรับฤดูถัดไป
และเมื่อได้ของดีหรือของหายาก คนอุบลไม่เก็บไว้เพียงลำพัง
แต่แบ่งให้ลูกหลาน แบ่งให้เพื่อนบ้าน
เป็นทั้งอาหาร น้ำใจ และสิริมงคลที่ส่งต่อถึงกัน
ครั้งนี้ ผมจึงอยากแบ่งเรื่องราวจากอุบลให้กับคุณ
และชวนมาร่วมค้นพบวัฒนธรรมการกินในฤดูฝน
ผ่าน “สำรับเมืองนักปราชญ์”
Some stories live beyond the pages of books.
They live in ingredients, in seasons, and in the sounds of the table.
When the rains come, pitter-patter, Ubon’s rivers, forests, and fields begin to give. River fish, forest finds, fresh seasonal greens. Alongside them comes the old wisdom of fermenting, preserving, and preparing food, passed from one generation to the next, keeping the taste of the rains for seasons to come.
When something good or rare finds its way into their hands, it travels. From grandparents to grandchildren, from neighbor to neighbor. A shared dish, a warm gesture, a blessing. Food passes hand to hand, table to table, carrying a little bit of good fortune with it.
This time, I’d like to bring you closer to Ubon through “Samrub Mueng Nak Prach,” a taste of the city’s rainy-season food culture.
